Recipe: Stuffed Butternut Squash with Curried Cauliflower


This is a super healthy and easy meal that can be adapted to work with whatever you have in your fridge!

Ingredients:
1 Small Butternut Squash
3-4 Florets of Cauliflower-broken into pieces
Garlic-chopped
Olive Oil
1/2 teaspoon Cumin
1/2 teaspoon coriander
1/2 teaspoon turmeric
1/2 teaspoon chili powder
Salt to taste

Directions:

  1. Preheat oven to 350
  2. Prepare butternut squash by cutting it in half and scooping out the seeds
  3. Rub butternut squash with olive oil and sprinkle with salt
  4. Toss cauliflower, garlic, spices, olive oil and salt and spoon into the open area of the butternut squash where the seeds were scooped out
  5. Place the squash on a baking sheet lined with foil and pop in the oven
  6. Bake in the oven for about 45-60 minutes depending on the size of your squash and how soft you like it.  You can test by inserting a fork which should easily go through the flesh of the squash.
If you don't have the spices a mentioned above or cauliflower, you could easily swap for any vegetable or beans with olive oil and garlic.  I served it with a wild baby arugula salad with roasted golden beets- recipe to come!

DIY: Raw Honey Facial Mask

Good Morning Beauties!
I wanted to share with you all one of my favorite new additions to my beauty routine- the Raw Honey Mask!  

First off, I bet you are wondering- what on earth are the benefits of honey for my skin?  Well, let me fill you in:
  • Acne: Honey is naturally antibacterial, so it's great for acne treatment and prevention.
  • Aging: Full of antioxidants, it is great for slowing down aging.
  • Complexion boost: It is extremely moisturizing and soothing, so it helps create a glow.
  • Pores: Honey is clarifying because it opens up pores making them easy to unclog.
There are a ton of additional benefits that I won't bore you with....simply put- it's perfect for every skin type and is a wonder mask that benefits your skin in pretty much every way you could ever imagine!

This is my favorite raw honey and I keep multiple jars for cooking, baking or beauty.  The price ranges, depending on where you buy it, from $7-$12.  Before you start thinking about how that may be a little pricey for honey- this is far cheaper than the majority of masks that are on the market AND will last you at least 6-12 months!

Here are the dets:
  1.  Apply honey to face with fingers or wooden craft stick 
  2.  Leave mask on for 15-30 minutes (Note: while this raw honey is quite thick, your body temp will melt the honey a bit so make sure to have an extra towel around so that it doesn't drip it's sticky goodness all over you! :)
  3. Wash off with warm water


Viola!  It's really that easy.  I try to do this at least once a week.  Give it a try and let us know how you like it!

5 Days of Lovin: 5 Easy, Cheap, Fun ways to treat your Honey this Valentine's Day!

Hola Muchachas!

Valentine's day is right around the corner and we are bringing you over the top, cheesy, ridiculous ways to treat your significant other AND yourself-whether you are single or taken

Here how it works:
  • Every day, starting today, we are going to post an idea to implement the following day.
  • The whole point is that you treat yourself or your partner to a little fun for the next 5 days leading up to Valentine's Day.
  • Why?  Cuz it's way more fun than buying a present and your honey will be so confused and amused by your cheesyness!

Day 1- Monday

If you are in a relationship:
  1. Write a love letter to your lover.  Everyone loves a love letter!  In your letter, give him a heads up that every day leading up to Valentine's Day will be a surprise treat!
  2. Leave the love letter in his/ her car along with your song/ wedding song ready to play on their stereo when they turn the car on (burn a CD and leave it in the stereo if you have to). 
  3. Put your love letter in an envelope and on the outside of the envelope tell him/ her to turn the car on before they read it- that way the song will begin as they read your letter. ;)
Is this ridiculous and over the top- YES!  But it's Valentine's week and a perfect excuse to be extra cheesy.

If you are single:
  1. On Monday morning, along with your favorite cup of joe or tea or whatever floats your boat, write down atleast 5 reasons why you're awesome and why one day you will make someone really happy!
  2. On your way to work or wherever you may be going that day- make sure to blast your favorite song.  There is nothing better than a dance party in the car!  Music fees the soul :)

Raw Taco Tuesday!


We are completely obsessed with this recipe!  I made it for my Sis and Skylar a few Saturdays ago as a power lunch while we were taking photos, we all immediately were in complete awe of how a raw/ vegan recipe could be so delicious and fulfilling. Everyone who knows me, knows that I could eat burritos all day every day, live for salsa and put guacamole on everything.  So for me to feel that this could actually compete with my typical Mexican fare, is kinda a big deal.  

What I absolutely love about this recipe is that it uses a whole, all natural ingredient to imitate meat unlike many other vegan recipes that use the typical tofu/ tempeh/ processed fake meat.  I followed the walnut taco recipe exactly but decided to make my own toppings based on what I had on hand and what I traditionally would top a taco or burrito with.   This recipe is so healthy and so easy, with such a small ingredient list, that there is no reason not to give it a try!

Walnut Taco Mix 
(this makes about enough for 1-2 people, if you are making it for more than yourself I would def recommend doubling the recipe)
Ingredients:
1 cup raw walnuts
1 Tbsp. nama shoyu (raw, unpasteurized soy sauce) or Raw Coconut Amino Acids (which is what I used)
1/8 tsp. ground chipotle pepper (or more if you like it spicy!)
1 tsp. ground cumin
1 tsp. extra virgin olive oil
Romaine, Butter Lettuce or Kale leaves to act as tortilla

Directions:1. Put all ingredients in a food processor and pulse just to mix. Don’t over-blend, or you will make butter!

Pico De Gallo
Ingredients:
2-3 Tomatoes- diced
1/2 Onion- diced
Handful of Cilantro-chopped
Juice of 1/2-1 Lime (to taste)
Salt

Directions- Combine all ingredients and toss to mix

Guacamole Sauce
Ingredients:
1 Ripe avocado- diced
Drizzle of Olive Oil
Salt to taste
Handful of Cilantro- Chopped
Juice of 1/2 a Lime

Directions-Combine all ingredients and mash until you achieve a smooth consistency.

Layer mix, pico de gallo and guac ontop of your favorite leafy green and enjoy!
